The US restaurant sector is looking and acting quite a bit differently than it did prior to arrival of the COVID pandemic a few years ago.
For one thing, there are fewer restaurants operating now than before COVID hit in 2020. Last year, there were roughly 631,000 US restaurants, approximately 72,000 fewer than in 2019, according to Technomic, a foodservice research firm.
The mix of restaurants is also different.
