Nicki Holmyard reports from Thailand on how the country's seafood processors are constantly developing new products for domestic and world markets
Thailand's greatest seafood commodity export is shrimp - some 350,000 tonnes were exported in 2006 out of a total production of 500,000 tonnes, with a value of $2.4bn. This gives rise to a significant processing industry, which provides frozen, chilled and value-added products to meet world demand, including breaded, battered and marinated shrimp, shrimp rings and dim sum.
Ninety per cent of production is white shrimp (Penaeus vannamei), with the remainder black tiger shrimp (Penaeus monodon).
