This is the biggest factory in the world for gutting and filleting salmon,’ says Ken Schønningsen, factory manager of Marine Harvest’s processing plant in Eggesbønes, Norway. ‘We take the fish from 66 grow-out sites off the coast. The biggest distance is from a site in the south where it takes 15-16 hours [by well boat] to get to the plant.’

The Eggesbønes factory started out as a pelagic processing plant in the early 1990s, but was re-built for processing salmon in 2003.
