There is not much information available about deep-sea fish but now, as a result of many years of interdisciplinary research, a Norwegian research institute has gleaned more knowledge about these species product characteristics. Tom Wray reports

ONE of the deep sea species studied by Norway's Moere Research is the roughhead grenadier. In Norway, roughhead grenadier (Macrourus berglax) is a by-catch during longline and net fishing for Greenland halibut, but demand is increasing, according to the foundation.

The flesh of the roughhead grenadier has a good firm texture, say the Norwegian researchers.
