Using domestic seafood, chefs will compete for top seafood chef at the Louisiana Foodservice Expo in New Orleans on Sunday. Each recipe reflects the chef’s home state and is simple enough for most cooks to make at home.

The cook-off is the first since Hurricane Katrina, which struck the Gulf Coast on Aug. 29, 2005. Sponsors are hoping the event, which is expected to draw thousands of attendees including national media, will be a reminder of the seafood industry’s continuing struggle in the region.
