“People are tired of the same old species,” Frisch told IntraFish. “I think people are looking for new items. They’re tired of cod, pollock, grouper.”
The Florida-based company is getting more interest in its barramundi, hoki and parrot fish, Frisch said. “They want something different on the menu,” he said.
Tuesday is the final day of the four-day show, and more than 70,000 people attended.
At Cannon Fish Co., President Peter Cannon said salmon is still a hot topic, especially wild salmon. “They’re asking for wild, but still using farmed,” Cannon told IntraFish.
