“Our fish sales are growing significantly ahead of the market,” Ryland Langley, who oversees Waitrose’s fish counter assortment and sustainable seafood sourcing policy, told IntraFish.
Seafood sales are a significant sector for Waitrose. While the retailer accounts for 4.2 percent of the U.K. retail market, its seafood sales account for 10.7 percent of the U.K.’s total sales of prepared, fresh and smoked fish, according to Nielsen data for the past 52 weeks.
Of its top five selling species in terms of volumes and sales -- farmed salmon, shrimp, tuna, cod and haddock -- 46 percent is farmed, while the rest is wild, Ryland Langley said.
