When most people think of Scottish seafood, they think of salmon. But Scottish celebrity chef Mark Greenaway, owner of Restaurant Mark Greenaway in Edinburgh, told IntraFish that there's an "abundance" of species to choose from, and he hopes to bring consumers' attention to them.
At the Seafood Expo North America Scotland booth, Greenaway was busy sampling nine different species of fish and shellfish for tasters.
From haddock to langoustine to scallops and monkfish, "Scotland is more than just salmon," he said.
