Kentucky-based Blue Shore Fishery is investing more than $1.3 million into a processing facility in hopes of turning the area's invasive carp into wholesale food products, reported local news agency KFVS12.
The company, which obtained help from the Kentucky Innovation Network Office for the venture, is creating 66 jobs with the carp idea. Products from the carp include surimi and fishcakes and will not contain fillers, additives or preservatives.
"It is great to celebrate an entrepreneurial success story like that of Blue Shore Fishery," said Kentucky Governor Steve Beshear.
