Costing more than £1 million (€1.2 million/$1.7 million), Dawnfresh refitted its main £12 million (€14.1 million/$20.2 million) processing plant to add four new trout processing lines to an existing line.

“Uddingston will process 9,000 metric tons of chilled and frozen trout this year, which is 85 percent of the U.K. market, and is at the same time coating 2,400 metric tons of scampi, which is 40 percent of the U.K. market,” said Peter Thompson, group operations director.

Twenty-three farms supply trout to the plant, all of which were included in the takeover along with a hatchery, giving Dawnfresh total control of the operation from egg to sales outlet.

Thompson
