Frustrated by the low dockside prices for tuna over the last few years, Lorient-based trawler operator Eric Guyniec of Armement de la Pêche Artisanale de Keroman (APAK) went to research institute ID Mer with a plan to increase value.

As a result, the two parties developed a range of tuna-based patés aimed at a small but discerning market.
“We needed to add value to offset the rising cost of fuel and other costs,” Guyniec said.
