The Prix d'Elite finals at the European Seafood Exposition in Brussels is always the focal point of Europe's new seafood innovations, and this year's event did not disappoint.

From Deutsche See's new wooden leaf-grill salmon and pangasius (pictured) to Alfocan's skewered crayfish, there were many interesting new takes on traditional favourites.

And, similarly, the creative juices flowed in other parts of the world: Aqua Alliance's black tiger shrimp cigar from India and Icelandic USA's beer-battered pangasius were just two examples of innovation, many of which were no doubt spurred on by the challenges of the recession.
