Laurent Metivier: Yes, I think the European market could be the next big market for tilapia. There are more than 300 million consumers in the European market and whitefish fillets are very popular. In addition, tilapia can be a very good and easy substitute in many wild fish recipes. It is easy to cook and tough to overcook, skinless, boneless, and has a steady price.
