Phillips' Eastern Shore crab cakes are made with a creamy wet mix that includes a blend of Worcestershire, lemon, seafood seasoning and a touch of mustard.
The technology behind the emulsification process of these reformulated cakes allows the wet mix to expand and capture moisture when cooked.
Made with Ritz crackers, Phillips says each 3.25-ounce. cake is steam set to 145 degrees Fahrenheit to allow it to be reheated quickly without losing moisture.
The company's coastal crab cakes are par-cooked, frozen and can be quickly reheated because of the same innovative steam set technology and wet mix engineering used in the Eastern Shore crab cakes.
