M&J Seafood, Britain’s leading seafood provider to the foodservice sector with a 20 percent market share, commissioned research consultancy Cambridge Direction in August to poll caterers on their understanding and use of sustainable species.

The survey questioned 300 caterers from restaurants, hotels, workplaces and public houses. The same questions were put to M&J’s own customer base, taking the total number of individual enterprises interviewed past 500.

The findings were published Nov. 3 in the report "Sea of Change". Despite strong public interest in sustainability, a staggering 60 percent of non-M&J customer caterers never include information on their menus about where their fish is from, how it is caught or what measures are in place to ensure the fishery is well managed, the report found.

Twenty
