Southern California seafood restaurant Slapfish founder Chef Andrew Gruel has dipped his toe on the US East Coast -- Baltimore and New York City -- and even the Middle East, and now he's taking his sustainable seafood to the Windy City.
Gruel, who has partnerships with the Aquarium of the Pacific and Seafood for the Future, has "always had the goal to make sustainable seafood approachable in all the biggest food cities outside of Southern California, including Chicago."
The latest will open as a one-night pop-up in Chicago, during which Gruel and his team will showcase sustainable and local seafood, including wild Pacific albacore poke, clam chowder fries, East Coast-style lobster roll tacos, shrimp and crab sauce and lobster dip.
