State Fish, based in San Pedro, CA, is shifting toward more value-added products with its Gourmet 101 line, which is being produced by HPP Food Services (HPPFS), a company established in early 2011, using HPP equipment supplied by Kent, WA-based Avure Technologies.

The Gourmet 101 product line-up features five types of seafood -- salmon, shrimp, mahi mahi, tilapia and surimi -- with HPP packaging in various sauces, said Jennifer Soto, an import and export sales executive with the company.

These are Tuscany Shrimp Saute; South Pacific Mahi Mahi Saute; Tequila Lime Mahi Mahi Saute; Tilapia Monterey Saute; Tilapia Tequila Lime Saute; Southwest Salmon Saute; and California Seafood Salad.
