Report: seafood one of fastest-growing restaurant segments

The “Top 100 Emerging Chain Concept Report” by Technomic Inc., a Chicago-based company that provides research on the food industry, features 100 up-and-coming operators, including several seafood restaurants.

Within full-service chains, seafood represents one of the largest and fastest-growing segments, said Darren Tristano, executive vice president of information services.

“We’ve seen an influx of growing, new seafood casual dining concepts,” Tristano told IntraFish. “Bonefish is growing and quite a few other smaller chains are emerging.”
