As food development director for contract catering company Elior UK, Peter Joyner has the unusual task of working with clients in fields ranging from Defense to Education and staying in budgets ranging from "extremely tight to 'money is no object'" he says.
Prior to this gig, he worked at Sodexo and and Gardner Merchant, and this year he was asked to be a main judge at the Seafood Excellence Global Awards at the 2016 Seafood Expo Global in Brussels.
Here, he speaks to IntraFish about his unique job and the trends he sees change on a regular basis.
