The Championship traditionally marks the beginning of the native oyster (Ostrea edulis) season, a date eagerly awaited by lovers of the subtly-flavoured mollusks, and challenges contestants to open 30 oysters in as short a time as possible and present them ready for human consumption.
Judges Chris Leftwich (chief inspector Billingsgate Fish Market), David Jarrad (assistant director Shellfish Association of Great Britain) and Sylvain Ho Wing Cheong (Seafood Chef) found Lema’s 3min 40sec entry to be the pick of the bunch. Lema will now go on to compete in the International Oyster Opening Championship in Galway, Ireland, at the end of the month.
