When it comes to the business of producing organic salmon, Angus MacMillan can be counted among the pioneers.
MacMillan is by no means awed by the big companies that mass-produce salmon.
"I'm happy to produce a salmon that takes 18 months before it's ready to be slaughtered, and I understand the marketplace and supply chain after 20 years in the business," he said.
As a fish farmer on the Western Isles in Scotland, he's one of three farmers left in these parts. In order to survive, he was unable to continue with regular salmon production and had to find his own niche.
