At Organic Ocean Seafood, Steve Johansen and Dane Chauvel began thinking about the amount of fish they would need for the Olympics last year when they were out fishing.

The company sells to about 50 restaurants in Vancouver, and only sells fish it catches sustainably, so planning ahead was essential to ensure enough supply for the hordes of people expected to attend the Olympics.

“We trap-catch our spot prawns, all of our salmon is hook-and-line, our ling cod, halibut, our tuna,” Johansen told IntraFish.
