US shrimp importer Mazzetta Company launched customizable options for its clients this year.

Its domestic plant, Gloucester Seafood Processing (GSP), now offers customized specifications of Seamazz Chilean Sea Bass and Seamazz cod using hands-on, custom cutting technology to yield consistent portions and fillets.

"Not only are these products customizable, but GSP processes all fish without any introduction of chemicals, phosphates, or non-phosphate blends," said the company.

"This process means no injections or marinating; which usually nets an artificially heavier product that is notorious for dissipating once in a thawed or cooked state."
