It’s too soon to tell if, or how, the record-breaking run of Alaska pink salmon will affect global markets this year, but the amount of fillets processed and sold will be the highest ever, experts say.
What used to account for only 20 percent of the overall production has grown rapidly to a 48-48 split of the harvest between canned and frozen pink salmon, with 2 percent of the catch sold fresh.
Frozen pink salmon production exploded from 70 million pounds in 2003 to more than 127 million pounds in 2011, according to the Annual Alaska Salmon Production Report.
