Lighter fare is on more menus this year, be it in lighter dishes, seasonings and sauces heavily showcasing seafood and citrus and fruit flavors such as lemon, lime and peach, restaurant industry consulting firm Technomic said in its recent Top 500 report.
“We have found that new entrees incorporating grilled shrimp, tilapia and salmon are becoming increasingly popular in both limited- and full-service restaurants in wraps, mixed grill platters and sandwich wraps,” Darren Tristano, executive vice president of Illinois-based Technomic, told IntraFish.
