“In France we produce 120,000 to 140,000 metric tons of oysters a year and 60 to 80 percent of this is for the Christmas market,” Stephan Alleaume of Les Parcs Saint Kerber told IntraFish.

Over the last 10 years, the number of consumers buying oysters has fallen 20 percent in an environment that has a great deal of competition in the market for cold starters, he said.
