France Haliotis, based in Brittany -- the only aquaculture company in the country that cultivates abalone at sea -- is “supplying mostly French restaurants, but we have sent orders to Dubai, Germany and Hong Kong,” company founder Sylvain Huchette told IntraFish.
“We are supplying about 20 Michelin stars a week, and more in the summer,” said Huchette.
They are shipped live to restaurants, with the Hotel George V in Paris and Ferran Adria at El Bulli in Spain regular customers of France Haliotis.
