"I'm juggling a lot of balls here," said Stephen Stansfield, managing director of Grimsby-based processor Flatfish, while pulling a large plaice out of the container next to him and casually grabbing a filleting knife.
His hands ran over the fish, eyeballing its shape before making the first cut. After only a few seconds, the fish is filleted, leaving behind two perfectly shaped and sliced fillets.
Holding up the remaining skeleton, Stansfield was visibly pleased with his work. "We're very hands-on," he said.
