It is always a busy time for van Olphen and his fledgling Fishes empire.

The company’s latest own-label frozen product line, using MSC-certified fish, is being rolled out across Europe, while the business completed a restructuring process that should “take it on to the next level.”

A new cookbook in which van Olphen spends time living and fishing with coastal communities to tell their story is nearing completion.

IntraFish: You’ve come a long way from opening your first Fishes outlet in 2003, describe how the company has evolved in the last six years?
Bart van Olphen: For almost five years the business was pretty stable, growing by opening new stores here and there.
