“It’s a challenge, for sure,” EcoFish founder and CEO Henry Lovejoy told IntraFish following Wednesday’s announcement of the launch of the company's foodservice division.
As one of the first products is wild Alaskan salmon, Lovejoy said sourcing enough product could be tougher this year because the salmon harvest did not meet expectations.
Either way, it will take some time to get up to speed and ensure a steady supply of sustainable product, and to that end, EcoFish Foodservice has signed a deal with United Natural Foods Inc.
