Canadian traditional ale brewer Picaroons has made a new "dark and smokey" ale using organic kelp sugar harvested from Cooke Aquaculture's integrated multi-trophic aquaculture venture in New Brunswick.

The idea came about when Thierry Chopin, IMTA specialist from the University New Brunswick and the science behind Cooke's farm approached Picaroons, challenging them to make a beer using kelp as per some beer he had seen in Scotland.

The particular kelp being farmed by Cooke (Saccharina latissima) is being marketed under the True North Salmon Company brand after gaining organic certification in the Spring of 2014.
