One of the stories circulating at the European Seafood Exposition in Brussels, Belgium, last week was about a relatively new company in France that has begun selling microwave-ready dishes to supermarkets.
The company is selling salmon in a special sauce that takes two minutes to heat up in the microwave. Demand is so strong and sudden they are unable to meet it. The people behind the company said they no longer want whole, fresh salmon from the producers. They are after skin-free, bone-free fresh fillets so production of the ready-made dishes becomes more efficient.
