With the recent sky-high prices of farmed salmon, are more customers turning to species such as fresh tilapia?
Not necessarily, insiders told IntraFish.
Cheryl Fuller, director of fresh seafood operations at US-based Halperns', said she has not seen markets move off of salmon, even though her company has passed on price increases to the customer. Tilapia usage has increased, she said, "but other species in that price category have, as well," she told IntraFish.
"Prices have been stable with tilapia and I haven't seen any increases," Fuller said.
