The volatility seen in salmon prices is unmatched by any other species, a trait that is affecting the smoked salmon business on various fronts, especially in Europe.
Raw material prices have gone from the heights seen after Chile's production collapse, to hit rock bottom last year. Now, prices seem to be finally leveling out, though the problems of the salmon processing sector are far from over.
Price fluctuations will keep smoked salmon producers on the edges of their seats, Ole Clemensen, managing director of Danish company Norlax, told IntraFish.
