Oyster aquaculture and fishing in and around Chesapeake Bay on the East Coast of the United States was a dying industry in 2005, producing just 840,000 pounds, less than 1 percent of its historic abundance.

But that wasn’t going to stop the passionate and dedicated farmers such as Tal Petty, owner of Maryland-based Hollywood Oysters, who are helping turn the industry back into a multi-million dollar behemoth.

“It’s really part of the sustainable, local sourcing movement,” Petty told IntraFish. “You know where the oysters are coming from and it’s a consistent taste.”
