Americans love their catfish. And in the old days – prior to the dawn of the new millennium – "their catfish" meant one thing and one thing only: Catfish raised in the good old U S of A by a network of catfish farms spread across the south in places like Mississippi and Arkansas.

But today, an ever-increasing amount of America’s catfish supply is coming from the south of Vietnam, from places such as An Giang and Dong Thap.
