Could chefs serve Cod Picatta instead of Chicken Picatta? Or Seared Spicy Sole with Sesame Noodles instead of Spicy Beef with Sesame Noodles?

The Alaska Seafood Marketing Institute (ASMI) thinks so -- and it's challenging American chefs to do just that in its new campaign, Swap Meat for Alaska Seafood, which encourages chefs to substitute one of the many Alaska seafood species for beef, pork and poultry in the dishes they prepare.
