Kentucky-based Alltech, an animal nutrition, beer and bourbon company, is working with state and local officials in eastern Kentucky on plans to build another brewery, possibly a restaurant, and a land-based fish farm.
Although the project is still in the preliminary stages, Alltech CEO Pearse Lyons told IntraFish construction could begin as early as this year. The toughest question to answer is, which fish will the company farm?
Lyons said it's between tilapia, which the company is already growing in western Kentucky with the help of its algae, and trout.
