Listeria is on everyone's lips in the seafood processing industry: Marine Harvest's recall of its Delifish smoked salmon has not only impacted the company itself but its clients and end-consumers.

The recall resulted in a debate abut the US Food and Drug Administration's (FDA) zero-tolerance policy, and processors are now looking at ways to improve food safety at their plants.

One Italian company might just have the solution the industry needs: Como-based Sacco is selling a culture -- called Lyoflora FP-18 -- which produces bacteriocins that inhibit listeria growth in seafood products such as cold-smoked salmon.
