Silla Bjerrum is a chef-turned-businesswoman and the head of an expanding sushi chain in London. In 1998, she and former Managing Director Jeremy Rose began with a small sushi business operating out of one outlet with just four employees.
Today, Bjerrum is managing director of a chain that spans the capital, with six restaurants and an emphasis on using sustainable seafood.
The restaurant’s success mirrored the rise of sushi in Europe, now ubiquitous in many major cities on the continent and whose growth is accelerating.
