US foodservice providers are eager to get their hands on Alaska Copper River salmon, with consumers eager to dine in again and around 59 percent of US residents reporting they have been fully vaccinated.

Matthew Davis, a seafood buyer with US distributor Shamrock Foods, told IntraFish he is purchasing around 100 pounds of Copper River salmon to primarily be used in foodservice, a contrast to last year's first opening, when many restaurants began their first strict lockdowns.
