Western Edge Seafood debuted a new tilapia product at the Boston Seafood Show. The RED Select tilapia fillets are skinless, boneless and farm-raised on Hainan Island in China.

“This mainly goes to sushi restaurants or fresh cases at retailers,” said Creative Director Shawn Cessna. “It’s done in the traditional CO method, which there’s nothing wrong with that. It’s for the more cost-conscious customer because it’s $0.30 - $0.50 (€0.28 - €0.46) per pound less than Taiwanese tilapia, which uses the same process.”
