New York-based pop-up sushi restaurant Mayanoki is what co-founder David Torchiano calls “a passion project.”

Torchiano and co-founder Josh Arak have full-time jobs in the tech industry and even Mayonoki’s chef works at other restaurants. But the trio has turned their passion for serving sustainable sushi to New Yorkers into a way for patrons to eat well-sourced sushi and make new friends. The intimate setting — each dinner is prepared omakase style (translated to “I’ll leave it to you” or chef’s choice) by the chef, and all eight to 10 of the diners sit around him as he whips up fresh sushi for them.
