In the 52 weeks through Dec. 3, the value of total salmon sales at UK retailers rose 3.1 percent by volume to 57,965 metric tons, according to new figures from market research firm Nielsen.

The value of these sales, however, remained stable, only growing 0.2 percent to £871 million (€1 billion/$1.1 billion) over the same year prior.

Of this total, sales of chilled "natural" salmon accounted for 33,333 metric tons, a jump of 4.1 percent over the same period the year prior.
