Automated deep skinning from Steen FPM International, the Belgian manufacturer of Steen skinning machines, is developing a new automatic deep skinner for salmon, tilapia and other fish.
The company plans to launch the new machine on the market at the beginning of 2004 and to show it at next May's European Seafood Exposition in Brussels.
Designed to cut deeper and remove the dark meat from salmon and other fish to give higher quality fillets, the new machine will automate the process.
There is an increasing demand for such a machine in countries like Chile, where some salmon processors are not satisfied with the existing deep skinning machines on the market, claims Jan Leuridan, FPM International's managing director.
