Twenty chefs representing 19 states competed in the Great American Seafood Cook-Off on Sunday at the Louisiana Foodservice Expo in New Orleans. Using domestic seafood, each chef created a recipe reflecting his or her home state.

Timineri, executive chef for the Florida Department of Agriculture and Conservation, made the snapper with passion fruit cream and Florida citrus salad, garnished with Gulf shrimp and green mango jam. Timineri has served as the event chef for NASCAR, the PGA, and the Kentucky Derby.
