From Passionate About Fish
Although these fish fetch a high price, Dover sole is still one of the bestselling fish on restaurant menus. It has a beautiful flavour, and firm fillets. This is a classic sole recipe.
Ingredients (serves 2)
2 x 400-500g Dover soles, each one skinned and filleted into four
30g plain flour
2 tablespoons oil
50g butter
Chopped parsley
Juice of half a lemon
Salt and freshly ground pepper
Method
Season the flour with a good pinch of salt and pepper and then coat the sole fillets on both sides with the flour.
Heat
