On our way through Seattle’s Columbia City neighborhood this weekend, my wife and I saw the brightly lit Sam Choy's Poké To The Max restaurant beckoning us.
The restaurant, which started as a food truck several years ago, opened as a brick-and-mortar eatery earlier this year.
We pulled in and discovered what so many consumers have discovered or are discovering -- poke is one of the hottest food trends in the country right now.
