Caviar has hit the news in recent months with the US banning imports of beluga caviar from the Caspian and Black Sea regions (FFI, December 2005), and with markets such as the European Union continuing to be lucrative for this 'black gold', sturgeon farmers worldwide are looking to take advantage of good prices. CAVIAR Galilee, a subsidiary of Kibbutz Dan's Dan Fish Farms in Israel's Upper Galilee region, close to the border with Lebanon, is producing caviar from both white sturgeon (Acipenser transmontanus) and Russian sturgeon (A guldenstadti).
