Desert Springs Tilapia, which for the past three years has grown fish in Arizona's Hyder Valley, will this year produce around 1.8 million pounds (816.4 tonnes) Ð and if all goes to plan it could be producing much more in the next few years.
Despite being in one of the hottest and driest deserts in North America, the Hyder Valley has a perfect water source for rearing the highest quality tilapia in the USA, according to Desert Springs' Tark Rush.
